🧂 Ingredients
Dry Roasting
- Chana dal – 1 cup
- Coriander seeds – 1 cup
- Black urad dal – 1 cup
- Red chili – 25 to 30
- Black pepper – 2 tsp
- Fenugreek seeds – 2 tsp
For Pirandai
- Pirandai – 2 cups, cleaned & chopped
- Sesame oil – 2 tbsp
- Tamarind – lemon-sized
- Hing – generous pinch
🔥 Preparation Steps
Step 1: Prep Pirandai
- Apply sesame oil on hands to avoid itching.
- Break pirandai at joints, scrape fibrous edges.
- Chop into small pieces.
Step 2: Roast Ingredients
- Dry roast chana dal on medium flame until light golden & aromatic.
- Roast coriander seeds until crisp and they give a puffing sound.
- Roast urad dal till golden.
- Dry roast red chilies + black pepper.
- Finally roast fenugreek seeds on low flame till golden.
✅ Cool completely
Step 3: Cook Pirandai
- Heat 2 tbsp sesame oil in a pan.
- Add chopped pirandai and saute until color changes & raw smell disappears.
- Add tamarind, toss for few seconds and turn off heat.
Step 4: Grind
- Once all roasted ingredients and cooked pirandai cool down completely, add everything to the mixer at one go along with hing.
- Grind to a slightly coarse powder — not too fine.
✅ No need to grind dals separately — everything goes together.
- Let cool completely & store in an airtight jar.
🍽️ Serving Suggestion
- Mix with hot rice + ghee/sesame oil
- Sprinkle over curd rice
- Serve alongside tiffin dishes for added flavor
