For the Dough:

  • Wheat flour – 2 cups
  • Salt – ½ tsp
  • Water – as required

For the Veggie Stuffing:

  • Carrot – 3 (grated)
  • Cabbage – 500 gms (finely chopped)
  • Cauliflower – 250 gms (grated)
  • Oil – 2 tbsp
  • Salt – ½ tsp (adjust to taste)
  • Pepper powder – ½ tsp

For the Spicy Tomato Chutney:

  • Tomatoes – 2 to 3
  • Dry red chilies – 4 to 5
  • Garlic – 1 to 2 cloves
  • Peanuts – 1 to 1.5 tbsp
  • Sesame seeds – 1 tbsp
  • Salt – to taste
  • Water – as needed

Step 1: Prepare the Dough

  • In a mixing bowl, add wheat flour and salt.
  • Gradually add water and knead into a soft dough.
  • Cover and let it rest for 15 minutes.

Step 2: Make the Stuffing

  • Heat oil in a kadai/wok.
  • Add cabbage, carrot, and cauliflower.
  • Stir-fry on high flame for 2 minutes to retain crunchiness.
  • Add salt, pepper, and sauté again for 2 minutes.
  • Switch off flame and cool.

Step 3: Shape the Momos

  • Divide dough into small balls.
  • Roll each ball into thin circles like a poori.
  • Place stuffing in the center, fold, and shape into leaf momos (or any shape).
  • Steam for 15–20 minutes until cooked.

Step 4: Prepare the Chutney

  • Boil tomatoes, red chilies, and garlic until tomatoes soften.
  • Remove skins from tomatoes, cool all ingredients.
  • Dry roast peanuts, cool, then roast sesame seeds until they splutter.
  • Add everything to a blender with salt and water.
  • Grind into a smooth chutney.
