This wholesome Multi-Grain Dosa is made with a powerful blend of black chana, kabuli chana, green moong dal, jowar, rice, and urad dal — along with red chilies for gentle spice.

Unlike regular dosa, this version is slightly thick, coarse, and beautifully crispy. The addition of fresh drumstick leaves enhances both nutrition and flavor. Perfect for breakfast or dinner, this dosa keeps you full and energized for hours.

 🛒 Ingredients

  • Black chana – 1 cup
  • Kabuli chana – 1 cup
  • Green moong dal – ½ cup
  • Jowar – ½ cup
  • Raw rice – ½ cup
  • Urad dal – 2 tbsp
  • Dry red chilies – 7 to 8
  • Salt – as required
  • Hing – a pinch
  • Drumstick leaves – 1 handful (washed)
  • Oil – as required

 👩‍🍳 Method

 Step 1: Soaking

Clean and soak black chana, kabuli chana, green moong dal, jowar, raw rice, urad dal, and red chilies overnight.


 Step 2: Grinding

Next day, drain the water and rinse if needed.
Transfer soaked ingredients to a mixer.
Add salt and hing.
Grind to a thick, slightly coarse paste.
(Grind in batches if required.)

If salt was not added while grinding, mix it well afterward.


 Step 3: Fermentation

Ferment the batter overnight or for 7–8 hours.


 Step 4: Preparing the Batter

Before making dosa, mix the batter well.
Take only the required quantity in a bowl.
Add washed drumstick leaves and mix well.
Check and adjust salt if needed.


 Step 5: Making the Dosa

Heat a dosa tawa and spread some oil.
Sprinkle a little water to check if the tawa is hot.
Pour batter and spread slightly thick.
Drizzle oil around the edges.
Cook until edges turn golden brown and crispy.
Flip and cook the other side until crisp.
Remove from tawa and serve hot.

  • Can also be served with curd and pickle

  • Batter stays good in refrigerator for 2–3 days
